Cut cream cheese into squares and mix into hot beef. Stir until melted; set aside. Drain shells and set out on a cookie sheet so they don't stick together.<br /><br />Cover bottom of two 8x8 or one 9x13 baking dish with salsa. Spoon about 1 tablespoon of meat mixture into shell and add to pan. When all are filled spoon any remaining salsa over the top of shells and top with cheese. Bake at 350 degrees 20 minutes or until cheese is good and melted.<br /><br />**To freeze: Follow all steps except don't bake! You can line a glass baking dish with foil; freeze and then remove from pan, wrap up tight and place in ziploc bag or prepare in disposable foil pan.<br /><br />To bake after freezing: let thaw in fridge for most of the day and then bake in the oven until heated through and cheese is melted.</span></div>

Cook in crockpot 4 hours high or 8 hours low.<br /><br /><br /><b><u>Pizza Bites</u></b>- adapted from <a href="http://annies-eats.com/2010/02/01/pizza-bites/" style="color: #6699cc; text-decoration: none;">Annies-eats</a></span><span style="font-family: Georgia, 'Times New Roman', serif; line-height: 1.4;">1 T. instant yeast or 1 envelope (use the pizza dough yeast if you buy the envelopes)</span><span style="font-family: Georgia, Times New Roman, serif;"><br />4 c. bread flour (or you could use all purpose or a mix of whole wheat)<br />2 T. olive oil<br />1/2 c. warm water<br />1 tsp. sugar<br />1 tsp. garlic salt<br />1 1/4 c. room temp. water<br /></span><span style="font-family: Georgia, 'Times New Roman', serif; line-height: 1.4;">1 pouch of pepperoni</span><span style="font-family: Georgia, Times New Roman, serif;"><br />block of mozzarella, cubed<br />3 T. butter, melted<br />Italian seasoning<br />Parmesan cheese<br />garlic powder<br /><br /><br />Mix yeast and 1/2c. warm water. I find even though it's "instant" yeast, my dough rises better when I take this step. Mix all your dry ingredients in your mixing bowl; add in remaining ingredients and yeast. Use dough hook and mix until well incorporated and forms a ball. Let rest for 5-10 min. Preheat oven to 400 degrees.<br /><br /><br />Tear the dough into 20-24 golf ball sized pieces. Top with a piece of pepperoni and a cube of cheese. Wrap the edges of the dough around and pinched closed. Place in greased pie plate or pizza stone; edges should not touch each other. Repeat with remaining dough. Bake for 15-20 minutes or until lightly brown. <br /><br /><br />Melt butter and mix in garlic powder and Italian seasoning. Brush over baked pizza bites and sprinkle with parmesan cheese.</span><br />

Use about 2-3 tablespoons of the chicken mixture in each tortilla, careful to leave about 1/2 from edge so you can roll them up; roll it up as tight as you can.</span></div>

If you are a blog crawler or Pinterest junky like me, I'm sure you've seen countless posts and links to elaborate Once a Month Cooking or fill your freezer in 4 weeks kind of plans. I'm a planner but not like that! I don't know how these "super moms" do it. I have two kids, a husband and a dog under my feet daily. I'm doing good to get the house picked up and dinner on the table without losing my mind. Sometimes the house doesn't get picked up, but rarely does dinner not go on the table when my hubby walks in the door. </span><br />

<span style="font-family: Georgia, 'Times New Roman', serif;">I'm a big proponent of budgeting and menu planning. I rotate between planning 1 to 2 weeks at a time but have always been overwhelmed at the thought of planning an entire month for several reasons. I like to take advantage of sales and discounts. If chicken is 69 cents a lb this week guess what we'll be eating a LOT of next week! Plus putting all of this together myself and making a lot of it homemade really helps health wise since there isn't all that yucky stuff mixed in! Now don't get me wrong, there is a reason this page is called "Mostly Homemade", because I cannot and will not cook everything from scratch all the time because I don't have the time! Again I say, I don't know how these "super moms" do it! Whatever they are taking they need to share! </span><br />

Starting next week I'll be keeping my nephew 5 days a week (3 of them at my sister's house) and I got to thinking how hard that is going to make cooking dinner at a reasonable hour since I won't be getting home on those days until after 6 pm. So something had to give. I decided to give freezer cooking a try. So below you will find my strategy, menu plan and recipes. Trust me I know there is a LOT of room for improvement!</span><br />

<li><span style="font-family: Georgia, 'Times New Roman', serif;">I made a list of all the meat, veggies, mixes, etc. I already had on hand. <span style="color: blue;">Use up what you already have! Trust me your budget will thank you!</span></span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;">I made a list of recipes I wanted to try and some I already use and I know my family will eat, trying to avoid recipes with weird or expensive ingredients. I filled out my menu with breakfast, lunch and dinner. Now keep in mind, I do not always make exactly what's on the menu on that specific day, but I do make what's on the menu at some point that week. <span style="color: blue;">You've saved nothing and wasted a lot of time if you make something you're family will not eat. </span></span></li>
<li><span style="font-family: Georgia, 'Times New Roman', serif;"> I made my shopping list, matched coupons and hunted down the cheapest prices on the items I needed. Adjusting my list of recipes if necessary. <span style="color: blue;">I'm not saying everyone should coupon, but how could you not? I've cut our budget to $100-$125 every two weeks for EVERYTHING groceries, toiletries, paper products, pets, etc. </span></span></li>

Or I could have set down and written all the information on my containers before I started putting it all together, but I didn't. Or I could have been even more organized and finished 30 meals in one day, but I didn't. Do you know why? I have a life outside my kitchen! A 2 yr. screaming from the bathroom to "come wipe me!", a dog outside losing his mind because the meter reader walked up or a delivery man showed up, laundry that needs to be switched out and folded and I have yet to get a bath today, in fact I'm still in my pajamas. Is that too much information?</span><br />

<b>Carrot Zucchini Bars aka Healthy Yellow Cake</b><br />

2 eggs, slightly beaten<br />
3 T. sugar<br />
1/2 c. canola oil<br />
3T. high fructose corn syrup or honey (I'm allergic to honey but wanted sweet and sticky so HFCS)<br />
1 tsp. vanilla<br />
1 1/2 c. carrots, shredded (I used the smallest blade on a hand grater)<br />
1/2 c. zucchini, shredded (Again, smallest blade and I peeled and seeded to help conceal it in the cake)<br />
1 1/2 c. all purpose flour<br />
1 tsp. baking powder<br />
1/2 tsp. ginger<br />
1/4 tsp. baking soda<br />
<br />
Preheat oven to 350 degrees. Beat the 2 eggs for just a minute, add oil, honey/syrup, vanilla and sugar and beat again until well mixed. In separate bowl whisk together dry ingredients. Add to wet mixture along with shredded veggies. Batter will be thick! Pour batter into greased 8x9 glass baking dish. Bake for 20 minutes or until toothpick inserted in center comes out clean.<br />

Lemon Cream Cheese Frosting<br />
<br />
1 block cream cheese, softened<br />
1 c. powdered sugar<br />
1/2 tsp. vanilla<br />
2 T. lemon juice<br />
<br />
Beat cream cheese until well blended, add vanilla and lemon juice. Slowly add powdered sugar until well blended. If too thick add 1 T. milk at a time until it reaches a good spreading consistency.<br />

1 box Spice Cake Mix<br />
2 eggs<br />
1/2 c. oil<br />
1/2 c. sugar<br />

Preheat oven to 350 degrees. Mix cake mix, eggs and oil together. Dough will be thick. Roll into balls about the size of a large marble; roll in sugar before placing on pan. Bake for 13 minutes. *If they begin to brown they are overcooked!<br />

Makes about 4 dozen cookies.<br />

Cooking in any form is one of my favorite past times. I am always trying out new recipes I find online or in cookbooks(you should see my collection) or come up with on my own. Testing them on my family and unsuspecting guests! (I know, how nice of me right!?) There have been major flops and failures like the instant oatmeal muffins a few weeks ago (yuck!). Then there are the ones that you hit out of the park that go on to the regular rotation of meals. Creole Daube is one of those recipes. </span><br />

According to <a href="http://www.deepsouthdish.com/2009/12/spaghetti-daube-in-creole-gravy.html" style="color: #336699; text-decoration: none;">Deep South Dish</a> daube was a staple in the Point Cadet area here on the Mississippi Gulf Coast but has waned in popularity over the last generation or so. I did a little research on Daube, a French term, with the recipe (or something similar) being brought to this area by French settlers in the 1700's when Mississippi was part of the Louisiana Territory.</span><br />

</span><span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">I also enjoy trying out foods that are indigenous to the area. I have a dislike of chain restaurants(thanks to the hubby), where no matter what city I'm in the dishes from restaurants like Applebee's will always taste the same. Over the last 10 years it was the hubby's influence that changed my opinion of chain restaurants and encouraged me to look locally for the mom & pop places that will serve food you can find no where else.</span><br />

When ready to serve pull out chicken breasts and shred; put back in pot and mix up. Serve over cooked rice.</span><br />

YUM! Also, I don't put the pizza sauce on the inside. Instead I put it in a little bowl and serve it as a dipping sauce.</span><br />

So I set out to make my own scones at home.</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/2 c. sugar</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">2 tsp. baking powder</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/2 tsp. baking soda</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/2 tsp. salt</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">2 T. butter</span><br />
<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">3/4 c. half and half</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">1/2 c. blueberries (frozen works best)</span><br />

<span class="Apple-style-span" style="font-family: Georgia, 'Times New Roman', serif;">In a bowl combine all the dry ingredients; cut in butter until it makes crumbs (like when you make a biscuit). Add half and half, lemon and blueberries. Mix gently! Put contents on a floured surface and knead lightly until dough comes together. It will be flaky. Pat out until about an inch or so thick. Cut into triangles like a pizza. Bake for 15 minutes or until slightly browned at 375 degrees. These freeze really well too. Freeze on cooking sheet before storing in a freezer bag.</span><br />
